I love the fact that there are so many non-dairy milk options commercially available for those who choose not to use dairy products for whatever reason, be it allergies, lactose-intolerance, and/or ethical issues.  There is hemp milk, hazelnut milk, soy milk, rice milk, 7-Grains milk, oat milk, flaxseed milk, almond milk, and of course, coconut milk.  This is not a comprehensive list, but you get the idea. There is no shortage of options for those of us who do not do dairy. 

Here is my issue, however.  The additives in so many of these "healthy" alternative milks.  Many of you are probably familiar with carrageenan, which is extracted from red seaweed.  Now that does not sound so harmful, right?  Well, unfortunately more and more evidence is speaking poorly of this additive.  It is said to potentially cause inflammation in the intestines.  The evidence is not definitive, and for now the FDA allows carrageenan as a food additive in order to thicken things.  It is found in almost every non-dairy milk available, and because of that I decided to just make my own!  I am not trying to be obsessive over little things, but I am tired of all the extra things added to commercial products, and why?  I figure the less additives the better, even if they are said to be naturally derived.

The only non-dairy milks I have found that do not have carrageenan are vanilla hemp and oat milk by Pacific and the Whole Foods 365 brand of almond milk.  If I find more I will let you know.  This additive is also found in non-dairy yogurts and ice creams as well. 

So lets make some coconut milk! It is so easy.  All you will need is coconut butter or flakes, water, and a blender.  If you want to sweeten it or add some vanilla extract you will thank me!

2 Tablespoons coconut butter or one cup flakes

2 Cups water

2 teaspoons vanilla extract (optional)

1-2 teaspoons honey or brown rice syrup (or sweetener of choice)

Place everything in the blender and blend ingredients.  Then pour the milk through a nut milk bag to separate the liquid from the pulp of the coconut.  Place the liquid in a glass jar and enjoy!  The leftover pulp can be used in smoothies or breads. 

It really is that easy, and the result, delicious coconut milk free from unnecessary additives.
